Spray large muffin tins. Line each muffin cup with sliced ham, add a teaspoon of salsa, and crack an egg in each cup, Top with green onions and a little bit of shredded cheese and pepper. Bake at 400F until the egg is cooked as you like it and the ham is crispy on the outside. Serve with fresh fruit and hot chocolate.
