Food truck bringing unique taste experience to Penticton

The COVID-19 pandemic is creating a new culinary option for Penticton foodies.

Seanna Pascal is bringing her Saltspring Noodle Bar food truck to the Peach City for a four-day stint at Cannery Brewing next month.

Pascal sells a number of unique noodle dishes, cooked without using oil, and there’s something for everyone.

“We have teriyaki, pad Thai, Thai sweet chilli, Malaysian peanut noodle boxes, as well as a variety of dietary boxes, peanut-free, dairy-free vegan and gluten boxes. There’s something on the menu for everyone,” Pascal, who is based in the Lower Mainland, says.

“A lot of people have come up to us and said, ‘we’ve never seen anything like this before, this is amazing.' People compliment us on the difference," she says.

Pascal did an episode of Carnival Eats on the Food Network last winter where she served a new item called the Phorrito.

“You take your basic bowl of Pho, but put it in a burrito. It was really interesting. When we introduced it to the Calgary Stampede, we sold out of it in a few hours,” she says.

The former Penticton resident says times are tough in the food truck industry as all major venues have been cancelled due to the COVID-19 pandemic.

“We’re usually at the Calgary Stampede, the PNE, Edmonton Klondike Days and the Saskatoon Exhibition. Prior to those events, we’ve done the Cloverdale Rodeo, the Maple Ridge Home Show and other events. It would have been a full summer schedule on the road this year,” she says.

Pascal is hoping to line up other venues in Penticton when she’s here in August.

She's currently working with Salt Spring Concessions, who have a new food truck at the end of the Okanagan River channel in Penticton called Chicky's Chicken.

“Catering, weddings, we’re all trying to do something,” she says of the food truck industry.

“We’re all hoping next year, things will be different.”

Saltspring Noodle Bar food truck will be at Cannery Brewing, 198 Ellis St., Penticton, from Aug. 6 to Aug. 9.

I have been looking for news in the South Okanagan - SImilkameen for 20 years, having turned a part time lifelong interest into a full time profession. After five years publishing a local newsletter, several years working as a correspondent / stringer for several local newspapers and seven years as editor of a Similkameen weekly newspaper, I joined iNFOnews.ca in 2014. My goal in the news industry has always been to deliver accurate and interesting articles about local people and places. My interest in the profession is life long - from my earliest memories of grade school, I have enjoyed writing.
As an airborne geophysical surveyor I travelled extensively around the globe, conducting helicopter borne mineral surveys.
I also spent several years at an Okanagan Falls based lumber mill, producing glued-wood laminated products.
As a member of the Kaleden community, I have been involved in the Kaleden Volunteer Fire Department for 22 years, and also serve as a trustee on the Kaleden Irrigation District board.
I am currently married to my wife Judy, of 26 years. We are empty-nesters who enjoy living in Kaleden with our Welsh Terrier, Angus, and cat, Tibbs.
Our two daughters, Meagan and Hayley, reside in Richmond and Victoria, respectively.
